Biryani is a  Delicious and favourite meals for every one. Vegetable biryani is an aromatic rice dish made by cooking jeerakashala / khaima rice with mix of veggies,herbs and spices. The vegetable biryani is much easier than other dum biryani. It's because Making a vegetarian version become much simpler as the veggies need no marination. 

VEGETABLE BIRYANI


Vegetable biryani is a mix of different vegetables and spices that are roasted
and cooked, then layered to aromatic 
 jeerakashala /khaima rice.

Traditionally, potato, carrots, beans, cabbage and green peas  are used for making vegetable biryani. But now a days many other vegetables such as cauliflower, soyabean, capsicum etc  are used. 

The vegetable biryani recipe  is same just like that of other biryani. Only some difference can be seen. In veggie biryani we use different vegetables instead of meat, fish or chicken. The other ingredients such as onion, tomato, ginger garlic paste etc are used same .The vegetable biryani have a unique taste and flavour while we comparing with other biryani.

The vegetable biryani is very simple and easy. You can save your valuable time and can make this as a best meals. Its very healthy biryani and it's good for children and adults. This is my mom's favourite biryani. Whenever she got different vegetables, she makes vegetable biryani with best tastes and flavour. I learned this recepi from my mother. Now I am the one who loves vegetable biryani very much.



VEGETABLE BIRYANI

Here I used simple ways to make vegetable biryani. I make the masala and cooked vegetables in pressure cooker. So it's very easy for making biryani very fastly. I used potato, carrot, beans, cabbage and green peas for making masala. The onion, ginger garlic chilly paste, tomato and spices such as Turmeric powder, Pepper powder, biryani Masala powder are roasted to make a Delicious vegetable biryani. The vegetables are added to roasted masala and it was cooked for 1 whistle. I didn't use water for cooking vegetables.

This is very tasty and  healthy biryani. This recipe is very helpful for those who don't eat meat, fish or chicken. 
Also you can serve this in a party and any other occasions for vegetarians. You can serve this biryani with some raita, pickle or salad. It's very tasty if there is beef fry or chicken fry as a side dish for vegetable biryani.

VEGETABLE BIRYANI


INGREDIENTS

For Masala

Onion  - 2 medium

Tomato - 1 big

Ginger  paste - 1 tbsp

Garlic  paste - 1 tbsp

Green chilly paste  - 1 tbsp

Potato - 1 big 

Carrot - 1 large

Beans - 150 grm ( 1 cup chopped)

Cabbage - 1 cup ( sliced)

Green peas - 1 cup

Turmeric powder - 1/2 tbsp

Pepper powder - 3/ 4 tbsp

Biryani Masala powder - 1 tbsp

Salt 

Sunflower oil - 5 - 6 tbsp

Curry leaves

Coriander leaves

For cooking  rice

Jeerakashala/ khaima rice - 3 cup

Water - 4 1/2 cup

Cardomom - 5

Cinnamon stick - 2 small piece

Cloves - 4 

Onion - 1/2 chopped

Ghee - 2 tbsp

Sunflower oil -  5 / 6 tbsp 

Salt

PREPARATION

👉  Take a pressure cooker, heat enough oil, add sliced onion, curry leaves and enough salt. Saute well until the onion gets light golden colour.

👉  Add ginger, garlic and green chilly paste. Mix well with roasted onion. Saute well for 2 minutes.

👉  Add chopped tomatoes and saute well until the water from  tomatoes comes.

👉  Then add spices such as Turmeric powder, Pepper powder and Biryani Masala. Mix well and saute  it for 2 minutes in a low flame.

👉 Then add chopped vegetables such as potato, cabbage, carrot beans and cooked green peas. Mix well with onion spice masala and Saute well it for  5 minutes.

👉  Then add chopped coriander leaves and close the pressure cooker. Cook it in a medium flame until the first whistles came. After the first whistles, switch off the flame and keep aside.

👉  Take a biryani pot/ vessel. Heat enough ghee and oil together. Then add chopped onion, Cardomom, cinnamon stick and cloves. Saute for 2 minutes.( Don't fry the onion).

👉  Add enough water. Once the water began to boil, transfer the washed and drained jeerakashala/ khaima rice into this vessel. Stir well and close the vessel. Cook it for 10 minutes in a low  flame.

👉  After 10 minutes, open the vessel and mix well with spatula. Then close the vessel again  and cook it for 10 minutes.

👉  Open the pressure cooker, check the masala. If there is excess of water, you can cook it for 5 minutes until the water from masala become dry.
 
👉  Once the rice is 90 % cooked, you can switch off the flame and start layering process.

For layering and Dum

 ðŸ”º Remove half portion of cooked rice from biryani vessel. Then on the top of remaining rice, you can sprinkle some biryani Masala powder and spread chopped coriander leaves.

🔺 Then transfer the masala into its top and then spread some coriander leaves.

🔺  Then transfer the remaining cooked rice. Then sprinkle some biryani powder and spread some coriander leaves

🔺  Close the vessel with tight lid.

🔺  Take a simmer ring or old flat tawa. Put the biryani vessel on the top of the summer ring / tawa. Dum it for 15 minutes in a very  low flame.

You can serve this with some raita and pickle. Its very tasty while you serve any fried chicken/ beef as a side dish with these vegetable biryani. Enjoy you memorable weekend with this tasty and healthy vegetable biryani.

INSTRUCTIONS

* It's better to cook green peas before you making masala.  You can cook the green peas 90%. Remaining  10% can cook with masala and other vegetables. Green peas should be cooked by using Turmeric powder,enough water salt in a pressure cooker.

* When you  are cooking vegetables with masala there is no need to add water. The vegetable have enough water itself from its body.

* You can choose other vegetables such as cauliflower, soyabean instead of cabbage and beans. But potato and carrots are must in vegetable biryani.

* It's better to cover the vessel with Aluminium foil before you close the lid.

* You can open the Dum only  after 10 minutes. Then you can mix well all the sides. ( In other biryani, there is no need to mix all sides). In vegetable biryani it is very tasty when we mix the rice and vegetable masala together after Dum.
