We know that Laddu a delicious and popular Indian sweet which is primarily made from gram flour (besan flour), fat (ghee, butter, oil) and sugar. These are round shaped sweet made from fine, tiny balls of besan flour. Laddus are often made from Gram flour but can also be made with Semolina powder. Ingredients such as chopped nuts, raisins are also added for final attraction.
These sweets are originally associated with states like Rajasthan and Uttar Pradesh, but now a days this popular sweet Laddu become one of the outstanding sweet that one can't avoid in their lives. This sweet is commonly used in parties, celebrations and other happiest occasions.
Let's follow my simple home made Laddu recepi that is exactly like Bakery style Laddu. Try this simple recepi to make your family and children happy.
INGREDIENTS
Gram flour (besan flour) - 2 cup
Water - 1 1/2 cup
Orange/yellow food colour - 1/2 tsp
Sugar - 2 cup
Salt - as required
Water ( for sugar syrup) - 1/2 cup
Cardomom powder - 1/2 tsp
Cashiew
Raisin
Oil - for frying
Ghee - 1 tbsp

PREPARATION
Step 1 :
Seive gram flour ( besan flour) 2 times. Then take a mixing bowl, add dry ingredients such as gram flour ( besan flour), salt and food colour for making boondi batter. Then add 1/2 cup of water. Then make a smooth batter without forming any lumps by using hand whisk. Make a thick flowing consistency batter.
Step 2 :
Take a nonstick pan, heat enough oil for frying boondis. Take a small hole perforated spoon and pour some prepared besan batter. Fry the boondis for less than 2 minutes. It should not get crisp, only get cooked. Then you can take off from oil and drain into a drainer or tissue paper. Keep this boondi for warm.
Step 3 :
Take a mixer grinder, add these boondi into a mixing jar and grind it. You can just crushed it (not like a fine powder).
Step 4 :
Take a large thick bottomed kadai, add 2 cup of sugar, 1/2 cup of water and 1)2 tsp Cardomom powder. Mix well until the sugar dissolves. Allow it to boil till you attain 1 string consistency.
Step 5 :
Add the crushed boondis into a sugar syrup. Stir well. Let them boil for 3 minutes. Once the boontis in sugar syrup began to boil, Switch off the flame. Close the kadai and keep aside for 1 hour.
Step 6 :
After 1 hour, take a pan, heat 1 tbsp ghee, then add cashiews and Raisins. Fry them until it turns light golden colour. Then pour it into the boondi mixture and mix well.
Step 7 :
When the crushed boondis get warmed and the sugar syrup absorbed, you can prepare Laddu. Allow the Laddu balls to dry for a few hours. Once the balls get cooked, you can stored it in an airtight container.
INSTRUCTIONS
* While making the batter for boondi, the consistency of water is very important. You can check the batter consistency by frying a few boondis. The amount of batter depends upon the gramflour (besan flour). The boondis should be round in shape. If the boondis become flat, the batter is thin and if they get tail ends the batter is thick. If the batter is thin, you can add little bit of gram flour and again check by frying few boondis. If the batter is thick, you can add little water and then check with same tests. Once you get correct consistency, then you can start frying.
* Its very important to use hole perforated spoon for frying boondi batter.
* While frying boondis, make sure that the drops of besan flour batter fall into the oil. Do not over crowd the boondis into the oil.
