Macaroni is a popular and delicious dish that every one loves. It's very simple and tasty. Also Macaroni is one of the children's favourite lip smacking  dish. 

Here I am sharing quick and easy recipes of Chicken Macaroni. But the recepi is different from Normal/authentic macaroni. Macaroni can be cooked  in different ways. Some people cook with white sauce, cook with chicken curry or beef curry, sometimes you can see macaroni with pepper masala curry/biryani masala curry.

I tasted almost all varieties of macaroni. But on last Thursday, I am very much interested to make Macaroni by using a unique style. Then I choose a simple method. Instead of using  red chilly powder, garam masala I used Arabic masala powder/kabsa masala powder for making chicken gravy. So after mixing up the boiled macaroni with chicken kabsa masala gravy, it gives an extraordinarily flavour and unique taste. My husband and kids loves very much.

This recipe is very perfect for quick dinner. Also you can make it as a Tiffin for your kids very fastly. It's sure that your kids will love it very much. It's one of the popular lip smacking dish that loved not only by kids but also  loved by people of all age groups. It means that Macaroni is an ultimate comfort food for many people across the world. This is one of the most popular dish found in every parties.

It is a simple and delicious recipes that has an Arabian tastes and flavour. Here I used 400 g of Dubai macaroni. It's small in size and have less cooking time. It's like a  thin prawns shape.  This recipe is made by mixing up of boiled macaroni with chicken kabsa masala. You can served it either as  quick breakfast, dinner or a tea time snacks. Also you can choose Mozerella cheese for topping to get extra taste and creamy.

INGREDIENTS


For cooking macaroni

Macaroni - 400 g ( 1 pack)

Water 

Salt 

Ghee - 1 tbsp


For making chicken kabsa masala

Chicken - 1/2 kg
 
Onion - 2 

Tomato - 1 big

Capsicum ( green) - 1 medium

Carrot - 1 

Ginger paste - 1 tsp

Garlic paste - 1 tsp

Green chilly paste - 1 tsp

Coriander powder - 1 tsp

Pepper powder - 2 tsp

Arabic masala/ kabsa masala - 3 tbsp

Coriander leaves 

Water - 1/2 cup

Salt

Sunflower oil - 3 tbsp

Ghee - 1 tbsp


INSTRUCTIONS

🔺 While boiling water for macaroni, you must add ghee. Otherwise the macaroni gets sticky after it's cooked.

🔺 Don't over cook the macaroni. You can cook  macaroni until it gets 90% cook. 

🔺 Don't add too much water for  chicken masala. Masala should be in gravy texture. Otherwise the macaroni  didn't combine / soak well with chicken masala.


PREPARATION

* Take 400 g Macaroni, wash well and drain water .

* Take a vessel, add 90% of water, then add ghee and enough salt. Mix well. Keep this for boiling in a high flame.

* Once the water began to boil, transfer the macaroni into this boiling water. 

* Once the macaroni get 90% cooked, drain it by using a strainer/ colander.keep aside.

* Take 1/2 kg Chicken. Cut them into small pieces ( like chicken 65 size). Wash well and drain them. Keep aside.

* Take a kadai, heat ghee and enough oil. Add chopped onion and enough salt. Saute well until the onion gets light golden colour. 

* Add ginger, garlic and green chilly paste. Mix well and cook for 2 minutes.

* Then add chopped tomatoes and lemon juice. Mix well and close the kadai. Then cook until the water from tomatoes comes. 

* Then add chopped capsicum and carrot. Mix well. Reduce the flame, add spices such as Turmeric powder, Pepper powder, Coriander powder and kabsa masala powder. Mix well. Close the Kadai with tight lid and cook it for 5 minutes. Stir well every 2 minutes.

* Add chicken pieces, mix well with these onion spice masala. Close the Kadai with tight lid. Then cook it for 20 minutes in a low flame. 

* Check the chicken pieces whether it's cooked or not. Once the chicken pieces are cooked, remove the lid and add 1/2 cup of water, then cook it in a high flame until the curry turns to a thick gravy texture.

* Then transfer the cooked Macaroni. Mix well with these chicken masala gravy. Add chopped  coriander leaves. Close the Kadai with tight lid. Then cook it for 10 minutes in a very low flame. Stir every 2 minutes. After that keep aside for 5 minutes.
