 POT BIRYANI / CHATTI DUM BIRYANI : 

DUM BIRYANI IS ONE OF OUR FAVOURITE BIRYANI. A PLATE OF HOT BIRYANI WITH SOME RITA AND FRIED CHICKEN MAKES A WONDERFUL MEAL TO REMEMBER.

THIS HOME STYLE POT BIRYANI/ CHATTY BIRYANI IS EASY AND SIMPLE. THE BEEF IS SUCCULENT COOKED WITH FLAVOURFUL SPICES AND LAYERED AROMATIC JEERAKASHALA RICE MAKING IT A RICH AND DELICIOUS DISH. THIS RICH AND AROMATIC MEAL IS ONE OF THE MOST DELICIOUS AMONGST THE RICE DISHES.

HERE IS A SIMPLE RECIPE OF POT BIRYANI / CHATTI DUM BIRYANI. THIS IS MADE WITH SAME INGREDIENTS THAT WE USED IN TRADITIONAL BEEF BIRYANI. ONLY CHANGES IN VESSELS. HERE I USED CLAY POT FOR MAKING BEEF MASALA. SO WE GET A VARIETY TASTE.

Now a days Pot biryani / chatty Dum biryani is one of the most  popular and  trending biryani that everyone likes. I am the one who loves the trending and hit dishes. Whenever I saw new recipes, it was sure that I want to make it on the next day. This recipe I got from my cousin. She makes this pot biryani in the party. I am attracted this external outlook, taste and flavour.The external part is covered with Maida dough. This method is used to Dum the biryani, that the air does not goes out. So the flavour and taste of rice and beef masala is still remain in the pot and the mix of rice and beef masala gives  an extraordinarily taste and aroma. Another interesting one is opening the dum. The maida batter is cooked and crispers. So by using knife you can cut the edges of dough and then slowly open/ remove the dough. Inside the dough there is a lid. you can remove it. At last you can reach your flavourful biryani Masala. There is a good smell coming while opening the lid. Then you can either serve it to any plates or you can eat in there. I like to eat this biryani in the pot itself. It was very easy to eat in the pot.

INGREDIENTS

BEEF WITH BONE - 1 Kg

ONION - 4 

TOMATO - 2 

GINGER PASTE - 1 tbsp

GARLIC PASTE - 1 tbsp

GREEN CHILLY PASTE- 1 tbsp

TURMERIC POWDER - 1/2 tsp

PEPPER POWDER - 1/2 tsp

BIRYANI MASALA POWDER - 1tsp

OIL - 4 tbsp 

CORIANDER LEAVES

MINT LEAVES

CURRY LEAVES

SALT

WATER

LEMON JUICE - 2  tbsp

FOR DOUGH 

ALL PURPOSE FLOUR - 1 CUP

SALT 

WATER

FOR  RICE

JEERAKASHALA RICE - 3 CUP

CARDAMON - 5

CLOVES - 4

CINNAMON STICK - 2 SMALL

GHEE - 3 tbsp

OIL - 4 tbsp

CARROT - 1/2 OF 1

WATER - 4 1/2 CUP

FOR GARNISHING

ONION - 1

CASHEW - 10

RAISIN - 10

CORIANDER LEAVES 

MINT LEAVES


FOR MAKING BIRYANI MASALA

PREPARATION

Take a pressure cooker , add washed and drained beef cubes , add a pinch of Turmeric powder, pepper powder, biryani Masala ,salt and enough water. Close the pressure cooker and wait for 4 whistles.

Heat a clay pot, add 4 tbsp of oil and add lightly sliced onion . Add enough salt and saute well until the onion turns light golden colour.

Add ginger, garlic and green chilly paste. Mix well and then add lightly sliced tomatoes. Saute well for 3 minutes and close the pot with lid. Cook it for 10 minutes .Stir well Evey 2 minutes .

Once the water from tomatoes comes,add Turmeric powder, pepper powder and biryani Masala powder. Mix it well in a low flame .Close the pot and cook it for 3 minutes in a low flame.

Transfer the cooked beef  into this masala mix . Add lemon juice .Mix well in a medium flame. Add 1/2 cup beef stock ( beef cooked water).

Add chopped mint leaves and coriander leaves. Cook the masala until it turns to think gravy texture. Switch off the flame and keep aside.

Heat a non-stick biryani vessel, add 3 tbsp ghee and 4 tbsp oil . Add lightly sliced onion. Saute well until the onion gets fried ( golden brown colour ). Roast the cashew and Raisins , then take out from the pan.

In the same oil, add 4 1/2 cup of boiled water, add enough salt, cardamon, cinnamon and cloves. Close the biryani vessel with lid. 

Once the water began to boil, add washed and drained jeerakashala rice . Stir well for 2 minutes and close the vessel . Cook it for 10 minutes in a low flame. After 10 minutes, open the vessel and add chopped carrot. Mix well and close the vessel. Cook it for 10 minutes.

Take another clay pot, transfer the half portion of beef masala into it.( Here we have 2 clay pot having beef masala.)

1 : On the top of beef masala, first add some fried onion, cashew and Raisins . 

2:. Add chopped coriander and mint leaves.

3 :Add half portion of cooked rice. Sprinkle some biryani Masala powder. Add fried onion, cashew and Raisins. Then garnish it with some coriander and mint leaves. 

4 : Layer the other clay pot by following these method.

Take a bowl, add all purpose flour and salt. Add enough water to make a dough  ( like Chapati dough). Divide the dough into two equal parts(ball). Make two thin sheet by using chapathi roller.

Close the clay pots by using tight lid. Then put the sheets on the top of lid . Press all the sides. So the pots sides are sticked with maida sheets. Then start to Dum this biryani. It is better to put simmer ring bellow the pot while dumming. Dum it for 15 minutes in a low flame.

THE POPULAR TASTY AND DELICIOUS POT BIRYANI / CHATTI DUM BIRYANI IS READY TO SERVE. IT CAN BE SERVED WITH PICKLES, RAITA,SALADS AND FRIED CHICKEN etc.
