Beetroot pickle is made from the process of mixing up of cooked and mashed/grinded beetroot with seasoned mustard seeds, Fenugreek seeds, curry leaves, Ginger, garlic, green chilly and spices such as Turmeric powder, Kashmiri chilly powder and Pickle powder/achar powder. These mixes are then soaked into vinegar and salt. Finally mixed with chopped dates. By combating with other pickle, the beetroot pickle stand in front of the pickle Menu. It's because the beetroot pickle gives the special taste than other pickle. It gives three mixed tastes. Sweet, sour and spicy. This pickle is one the trending pickle in Malabar Area especially in Kannur district. I am one of the fan of beetroot pickle. I makes this pickle many times. We all love it's tastes. It is sure that you can make this pickle by Following my recipies. No doubt it gives special tastes and attractive outlook than other pickle. This recipe I got from a Cook/ Chef in the marriage house. She gives the ingredients and I make it best. But she is not seasoned the ginger garlic and green chillies. She just chopped them and added when the beetroot are mixing/ soaking with vinegar. But for more tastes I make some differences, I seasoned the chopped ginger garlic and green chilly for 2 to 3 minutes. It gives more taste than her recepi. So I used this method to get more tastes in beetroot pickle.
Beetroot - 4 big
Garlic cloves - 7
Green chilly - 8
Ginger - small piece ( 1 inch long)
Vinegar - 1 bottle
Salt
Curry leaves
Mustard seeds - 1tsp
Fenugreek seeds - 1tsp
Coconut oil -5 tbsp
Pickle powder - 3tbsp
Kashmiri chilly powder - 3tbsp
Turmeric powder - 1/4 ( opt)
Dates -15
INGREDIENTS
° Peel the beetroot, cut them into small cubes. Then steam the beetroot for 20 minutes by using steamer.
° Take a kadai, heat enough coconut oil.
° Splutter the mustard seeds, Fenugreek seeds.
° Add curry leaves and saut for 2 minutes. Once the curry leaves gets Crispy, add chopped ginger, garlic and green chillies. Mix well and saute for 3minutes until the roast smell comes. Don't over cook / burnt the ginger garlic mix.
° Take a mixer grinder, add the steamed beetroot cubes. Grind well until it turns to a thick and creamy paste texture. Then add this grinded beetroot into the seasoned ginger garlic mix. Saute well for 2 minutes.
° Then add pickle powder, Kashmiri chilly powder, Turmeric powder and enough sat and mix them well.
° Add a bottle of vinegar. Mix the ingredients well until the ingredients mixed well with vinegar. Let them cook for a minutes. When the vinegar mix began to boil, you can switch off the flame. Keep aside for warm.
° Add chopped dates and mix it well with warmed vinegar ingredients.
The sweet, sour and spicy Marriage Special Beetroot pickle is ready.You can served this pickle with Biryani, ghee rice and other. It is a party special Hit pickle. Try this pickle and taste it once in your life
IT'S SURE THAT IT DIDN'T GET WORSE FOR 1 TO 2 MONTHS. YOU CAN KEEP THE PICKLE IN AN AIRTIGHT CLOSED CAN/ CONTAINER.
