Smoky Cauliflower saffron rice is a Delicious recepi made with cauliflower masala and steamed/boiled rice. The rice is then smoked by using charcoal to get extraordinarily taste and aroma. This recipe is very simple and easy to make at home with homemade ingredients. No other special ingredients are needed.
We know that, nowadays people were looking forward to get latest recepies. So here I am sharing my own recepi of tasty and delicious cauliflower saffron rice. This recipe is unique and I makes this with my own style and preparations. Here I used all my favourite ingredients. This is one of my experiment that I done last week. The experiment I tried is very successful. My husband and kids really liked this dish. The tasty cauliflower florets cooked and soaked in roasted onion masala mix gives a unique tastes. By adding saffron gives the rice extraordinarily flavour and aroma. I likes it so much. If you are interested in saffron, you must try this recipe once in your life. It's so tasty and delicious.
Cauliflower is an interesting vegetable that every one loves. It gives a special taste and flavor. There are many recipies that you can made with cauliflower. I have already shared my GOBI/CAULIFLOWER MANCHURIAN and GOBI/CAULIFLOWER 65 recepi earlier. This is one of the tasty unique style of cauliflower masala with rice. The recipe is very simple. This recipe is another version of biryani and Mandhi. The cauliflower masala is similar to biryani Masala and the final preparation of mixing up of cooked rice and masala is similar to Mandhi. So you can make quickly by taking same ingredients that you are using to make biryani and Mandhi. You can served this Delicious rice along with some raita, pickle and salads. It's very tasty even if you have any fried side items.

INGREDIENTS
For making rice
Basmati rice - 2 cup
Water - for boiling
Sunflower oil - 1 tbsp
Cardomom - 3
Cinnamon stick - 1 small
Cloves - 2
Dried black lemon - 1
Salt
For Cauliflower masala
Cauliflower - 1 large
Onion - 3
Tomato - 2
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Chicken Maggy cube - 2 cubes
Green chilly - 4 ( chopped)
Capsicum - 1
Arabic masala powder - 3 tbsp
Turmeric powder - 1/2 tsp
Pepper powder - 1 tsp
Lemon juice - 1 tbsp
Coriander leaves
Spring onion
Butter - 4 tbsp
For garnishing
Sweet corn - 1 cup
Coriander leaves - handful
Spring onion - handful
Saffron - 1 pinch
For extraordinarily flavoures
Charcoal cubes
Olive oil - 1 tbsp
INSTRUCTIONS
🔺 Use fresh and tender cauliflower.
🔺 Cauliflower florets should be soaked in boiling water. While boiling, you can use a pinch of salt, vinegar and Turmeric powder. It helps to remove all the hidden impurities from the cauliflower.
🔺 While making masala, you can make tomato puree from tomatoes. You can just blend it in a mixer grinder. No need to add water.
🔺 It's better to blend sliced green capsicum in a mixer grinder by using 1/4 cup water. Grind well to a fine paste.
🔺 Cauliflower masala should be in thick gravy texture.
🔺 Use long grain basmati rice.
🔺 While boiling rice, you must add 1 tbsp of sunflower oil. So the rice are not sticky with eachother.
🔺 While layering, you must add saffron in each layer. Saffron should be soaked in 1/4 cup water. Then you can add saffron and it's water in each layer. If you are not interested in adding saffron, you can just add it's water. Adding saffron gives extraordinarily flavour and colour in your rice.
PREPARATION
* Take 2 cup of basmati rice. Rinse and wash well. Then soak the rice in a water for atleast 1 hour.
* Take a whole big cauliflower, remove it's leaves. Then cut them into a medium florets.
* Take a sauce pan, add 90% of water. Then boil it for 10 minutes. Add a pinch of Turmeric powder, Vinegar and salt. Mix well. Then add cauliflower florets in to this boiling water. Switch off the flame and keep aside for 15 minutes.
* Take a kadai, heat enough sunflower oil, add chopped onion and enough salt. Saute well until the onion turns light golden colour.
* Add ginger, garlic and green chilly paste. Saute them for 2 minutes.
* Take a mixer grinder, add chopped capsicum and enough water. Grind well until the capsicum turns to a fine paste. Add these capsicum paste into the roasted onion mix.
* Once the capsicum paste began to boil, then in a same mixer grinder, add chopped tomatoes and grind well until the tomatoes gets fine paste. Then add these tomato paste/puree into the roasted onion mix. Mix well and cook until the tomato Puri began to boil.
* Then add spices such as Arabic masala powder, Turmeric powder and pepper powder. Mix well and cook for 3 minutes.
* Add Chicken Maggi cube. Once the Maggi cube dissolved in the masala mix, you can transferred the wash and drained cauliflower florets into this masala. Mix well and close the Kadai with tight lid. Then you can cook it for 20 minutes in a medium flame. Stir every 5 minutes. Once the water from cauliflower comes, you can remove the lid and cook them in a medium flame and dry the water.
Once the cauliflower cooked, you can add chopped coriander leaves and spring onion. Then switch off the flame and keep aside.
* Take a vessel, add 90% of water, add oil, salt and spices such as cardomom, cinnamon stick , cloves and dried lemon. Once the water began to boil, add washed and drained basmati rice. Cook the rice until it gets 90% cooked. Then drain the rice by using strainer or colander. Keep aside.
For layering
* Take a large biryani pot/vessel, add half portion of cauliflower masala.
* Add half portion of cooked rice on the top of cauliflower masala.
* Spread some chopped coriander leaves and spring onion.
* Then sprinkle some saffron and it's water( saffron soaked water).
* Again add remaining cauliflower masala.
* Then again add remaining portion of cooked rice.
* On the top you can spread some chopped coriander leaves and spring onion.
* Finally you can garnish it with some sweet corns.
* Take a piece of charcoal cubes. Put it in the top of the burner. Switch on the flame. Smoke the charcoal until it turns to a gray colour.
* Take a small steel bowl, keep it in the top centre of the rice. Once the charcoal burnt, transfer the burned charcoal piece into that steel bowl. Then add 1 tbsp of olive oil. Close the vessel immediately by using aluminium foil and tight lid. Cook the rice for 15 minutes in a very low flame.
* While serving the rice, firstly you can mix the rice well. Then only the rice and masala mixes together.
You can served this Delicious rice either as a lunch or dinner. Also you can served this rice in a party, occasions or any other celebrations. It will help your guests to attract this unique rice, it's tastes and flavour.
