 SWEET BALLS / UNNI MADURAM :

        Sweet balls or Unni maduram is a popular tea time snacks of Malabar Area. It is another version of Unniyappam.This is  a Malabar traditional  sweet snack made from White rice, Jaggery, Chana Dal etc. In Malayalam " unni" means Small, and "Maduram" means Sweet. It tastes Sweet and delicious. This is one of the favourites of all who loves sweet. My Mom usually prepares this sweet dish which is a sweet version of kuzhipaniyaram .I make this sweet by following my Mother's recipies .It tastes so sweet that is just like my mothers tastes. I can't believe my taste buds.  This sweet is crispy on outside  and inside part is very soft and Crunchy.

          Sweet balls / Unni maduram is a popular sweet snack of Malabar. It is a party special .Sweet balls /  Unni maduram is very special sweet which are served as a tea time snacks in housewarming Ceremony in Malabar areas.  When I make Sweet balls / Unni maduram, I follows my mothers recipies. Instead of using Maida( all purpose flour) I prefer White rice. There is a noticeable difference in texture as well as taste when using White rice. 

         I choose a simple method. I grinded all ingredients in a mixer grinder there by we can save time. You need to soak white rice a couple of hours. It is better to soak the rice for 3 or 4 hours. You can even soak overnight if you want. Then later grind everything in a mixer grinder and mix with melted jaggery. Then you can make sweet and tasty Unni maduram from these batter. To make these sweet Unni maduram, you need Unniyappam pan or moulded pan.

          This is an easy and simple recipe that  the beginners can also make without confusion. Sweet balls / Unni maduram is very simple and helpful for those who don't know to make unniyappam. Let's follow this step to make tasty & Crispy Sweet balls / Unni maduram.

SWEET BALLS / UNNI MADURAM


INGREDIENTS

White rice - 2 cup

Cooked rice - 1 cup

Jaggery - 500 grm

Chana Dal - 50 grm

Cardamom - 6

Salt 

Water - 1/4 cup

Coconut Oil - for frying

PREPARATION

Step 1 :

Wash and rinse 2 cup of white rice in water a couple of times. Then soak the rice in enough water for 3 or 4 hours.  You can even  soak  overnight if you want. 

Step 2 :

Take 50 grm of Chana Dal, wash well. Then soak the Dal  in enough water for 4  or 5 hours 

Step 3 :

Take a pressure cooker, add the soaked Chana Dal, enough water and salt. Close the pressure cooker and cook until 4 whistle comes.

Step 4 :

Later, drain the water from rice. Take a mixer grinder add the soaked white rice, add cooked rice, cardamon and 1/4 cup of water.Grind well until it turns to very  think creamy texture. Remove from the jar and transfer into a bowl.

Step 5 :

Take a sauce pan , Crush the jaggery by using knife. Add the crushed jaggery into this sauce pan .Add 3 tbsp of water. Let them boil for a minutes. Once the jaggery melts, turn off the flame. 

Step 6 :

Transfer the melted jaggery into the rice batter. 

Step 7 :

Open the pressure cooker, drain the Chana Dal from water. Transfer the cooked Chana Dal into the rice Jaggery batter.

Step 8 :

Add salt and mix the batter very well by using hand whisk. The batter should not be too loose. The batter consistency is like that of unniyappam batter 

Step 8 :

Heat the unniyappam pan( which contain mould). Add 1/2 to 1 tbsp of coconut oil in each mould.(You can also use ghee instead of coconut oil). Once the oil heat, keep the burner in medium  flame.

Step 9:

Apply the batter in each mould one by one. Fry the all batches by following these steps. When one side is fried turn it to next side. Fry the all batches until it turn crispy and golden brown colour.We can make 70 Sweet balls / Unni maduram from these batter.

The tasty and sweet balls /Unni maduram is ready to serve. It can be served with hot tea or coffee. The tastes and softness of Unni maduram lasts for more than 2 days.
