HOW TO MAKE SWEET, JUICY & CRISPY JALEBI AT HOME ?

JALEBI IS AN ARAB - INDIAN  DESSERT/ SWEET WHICH ARE POPULAR ALL OVER THE WORLD. ALL PURPOSE FLOUR ( MAIDA ), CORNFLOUR, YOGURT & BAKING POWDER  ARE COMBINED WELL AND DEEP FRIED IN A OIL AND THEN SOAKED IN A SUGAR SYRUP MAKES THE JALEBI SWEET, JUICY & CRISPY.  JALEBI IS ONE OF THE POPULAR FESTIVE SWEETS IN INDIA. AND IT  ALSO  KNOWN AS AN INDIAN TRADITIONAL SWEETS. IT IS ROUND AND SPIRAL SHAPED FRIED SWEET.

SWEET, JUICY AND CRISPY JALEBI

JALEBI IS ONE OF THE SIMPLEST AND MOST DELICIOUS SWEETS. THIS SWEET, ALWAYS  MELT IN THE MOUTH  OF ADULTS AND KIDS NOT ONLY IN FESTIVE TIMES BUT ALSO EVERY TIME.YOU CAN SERVED THIS  DESERT/ SWEET  WARM OR COLD. THIS IS A BEST SWEET ONE CAN MAKES THE GUEST HAPPY. THIS  IS ONE OF THE PARTY SPECIAL DESSERT.

HERE, I USED ALL PURPOSE FLOUR,YOGURT, BAKING POWDER, CORNFLOUR, ORANGE YELLOW FOOD COLOUR & SUGAR SYRUP TO MAKE THIS SWEET JUICY & CRISPY JALEBI. ALL PURPOSE FLOUR, CORN FLOUR, YOGURT, BAKING POWDER ARE MIXED WELL AND TRANSFERRED INTO A SQUEEZING BOTTLE. IT IS THEN DEEP FRIED IN A OIL AND SOAKED IN SUGAR SYRUP. IT IS SURE THAT,IT WILL NOT GET WORSE FOR 3 OR MORE DAYS. I GOT THIS RECIPE FROM MY FRIEND. I FOLLOW THE SAME RECIPE AND ITS SURE THAT I GOT CRISPY & JUICY  JALEBI. AND THE TASTES AND CRISPINESS OF JILEBIES LASTS FOR MORE THAN 3 DAYS.

LET'S FOLLOW THE STEPS TO MAKE SWEET, JUICY & CRISPY JALEBI.

INGREDIENTS

ALL PURPOSE FLOUR ( MAIDA) - 1 CUP

YOGURT - 1/4 CUP

CORN FLOUR - 3 tbsp

BAKING POWDER - 1

YELLOW FOOD COLOUR -1/2 tsp

WATER - 3/4 CUP

OIL - FOR  FRYING 

FOR SUGAR SYRUP

SUGAR - 1 CUP

WATER - 1/2 CUP

CARDAMOM - 2 ( CRUSHED)

PREPARATION

Take a sauce pan, add 1 cup of sugar and 1/2 cup of water. Let them boil for 2 or 3 minutes. (The syrup consistency is single thread. It  should not be too much think and sticky while touching with your forefinger and your thumb are pulled apart from gently.) Keep aside .

Take a bowl, add 1 cup of all  purpose flour / maida,1  tbsp baking powder& 3 tbsp cornflour by using seiver. It is to  remove some particles from the flour.

Take 1/4 cup of yogurt, beat well and add into the maida mix. Then mix well until all ingredients gets combined together. 

Add 3/4 cup of water in a bowl, add 1/2 tsp of yellow food colour in to it. Mix well until the water turns to a dark yellow colour. Add these coloured water into the maida mix. Mix and beat well by using whisk. Make a creamy batter. ( The batter should not be too much think and loose. If you take correct measurement, then you can get correct consistency of batter.)

Transfer this batter into a squeezing bottle.

Take a nonstick pan, heat enough oil. Keep the burner in a medium flame. Then squeeze the batter in a circle / round shape. Make three or more layer and bent it from one end to other end. While squeezing do not stop before the layer is formed and bended. Fry two sides of the squeezed batter until it turns crispy. ( Don't over cook, otherwise it doesn't dissolve with sugar syrup.) 

Once it fried , take out from the oil and transfer into sugar syrup. You should just dip the fried jilebi hotly in a sugar syrup and take them out. (Don't put them for long time, otherwise it will dissolved in sugar syrup long time and you lost its crispiness.)

Make all other batters by following these steps. Then you can make sweet crispy and  juicy JILEBIES. You can make 40 JALEBIES from this batter.

Tasty,sweet,crispy and juicy JALEBIES are ready to serve.It's very sweety and tasty. If you taste it once, you can't stop eating and its's sweetness melt in your mouth. You can serve this sweet either warm or hot.
