BAKERY STYLE RICE MURUKKU :
MURUKKU is a deep fried snack made with gram flour and rice flour. It is very Crispy light, aromatic, spicy and delicious. This is one of the popular snacks that both adults and kids loves to eat.
There are so many varieties of MURUKKU,here I am sharing the recipe of my grandmother. Here I am making MURUKKU with roasted gram flour ( besan flour) and roasted rice flour. I have added garlic and chillies to make Spicy. This is an instant recipe that a beginner's can also do. I take 2 cup of roasted rice flour and 2 cup of gram flour (besan flour). The measurement should be done correctly. The amount of rice flour and gram flour should be equal. Otherwise you didn't get correct texture of MURUKKU while making. Garlic cloves, green chilly, Cumin seeds and curry leaves are grinded and make a fine paste. These paste are added into the Rice and gram flour mix. Then for flavour I used black sesame seed. The mix of Rice flour, gram flour, garlic chilly paste and sesame seeds makes a soft dough which can be deep fried in oil by using Noolputtu/ idiyappam Maker. This MURUKKU recepi I tried many times and got best results. It tastes like that of bakery style Murukku.
Let's follow this recipe to make tasty and crunchy Rice Murukku at home.
INGREDIENTS
Rice flour - 2 cup
Gram flour ( besan flour) - 2 cup
Garlic cloves - 5
Green chilly - 7
Curry leaves - handful
Cumin seeds 1tsp
Kashmir chilly powder - 3 tbsp
Black sesame seeds - 1 tbsp
Salt
Water
Oil - for frying
PREPARATION
Take a mixer grinder, add garlic cloves, green chillies,cumin seeds curry leaves and 1 tbsp water. Grind well until the ingredients turns to a fine paste.
Take a bowl, add 2 cup Rice flour, 2 cup gram flour, Kashmiri chilly powder, black sesame seeds and enough salt. Mix well with your hands.
Add the grinded paste and mix well. After that, make a soft dough by adding enough water. The dough should not bee too thick or loose. The correct consistency is like that of 'Noolputtu/ idiyappam' dough. The dough can be seive through a seiver.
Take a heavy bottemmed kadai, heat enough oil. Take a Noolputtu/ idiyappam maker, put the Murukku disk in it.fill enough dough in this . Once the oil is heat, reduce the flame.( Keep in medium flame). Then sqeeze the dough in to the oil. You should squeeze like a small stick. Don't fry this in a high flame, it should be very hard to eat. Stir the Murukku every 2 minutes. Once it gets crispy and fried you can remove from the oil.
Fry all the dough by following these methods. You can keep this in an airtight container. You can used this snack for more than a week's.
