CHICKEN MAJBOOS ARABIAN STYLE
MAJBOOS IS AN ARABIC POPULAR DISH. IT IS ANOTHER VERSION OF BIRYANI. SOME PEOPLE ALSO CALLED MAJBOOS AS ARABIC BIRYANI. A SPICED CHICKEN AND RICE MAKES MAJBOOS TASTY AND DELICIOUS. SPECIAL SPICE POWDER IS USED TO MAKE THE RICE EXTRAORDINARY FLAVOUR AND AROMA. HERE THE CHICKEN PIECES ARE FRIED AND BLENDED WITH RICE. RICE ARE COOKED IN SPICES AND MASALA'S BY ADDING ENOUGH WATER.
I LEARNED THIS RECIPE FROM MY NEIGHBOURS. SHE IS ONE OF THE FAN OF ARABIC DISH. SHE PREPARE THIS VERY WELL. I AM SURE THAT, YOU CAN MAKE THIS SPICY CHICKEN MAJBOOS WELL AND CAN ENJOY THIS ARABIC CUISINE .
HERE I CUT THE WHOLE CHICKEN INTO EIGHT PIECES. CHICKEN IS THEN MARINATED AND FRIED IN OLIVE OIL. ONION, TOMATO PURI, GINGER GARLIC GREEN CHILLY PASTE, CAPSICUM etc ARE ROASTED IN THE SAME OIL ( CHICKEN FRIED OIL) AND ONLY ONE SPICE IS USED TO FLAVOUR THIS MASALA. HOT WATER IS THEN ADDED TO BOIL THE RICE. RICE IS THEN COOKED WITH THIS MASALA AND WATER. SO IT GIVES SPECIAL FLAVOUR. IT IS SPICY AND AROMATIC. IT CAN BE SERVED WITH YOUGURT, PICKLES OR TOMATO CHUTNEY. THIS CAN BE SERVED AS EITHER LUNCH OR DINNER. NOWADAYS THIS DISH IS VERY POPULAR IN ALL OVER THE WORLD. SO YOU CAN SERVE THIS IN A PARTY TO MAKE THE GUEST ATTRACTIVE AND DELICIOUS.

INGREDIENTS
BASMATI RICE - 2 CUP
CHICKEN - 1 BIG ( 8 - 10 PIECES)
ONION - 2 MEDIUM
TOMATO - 2
GINGER PASTE - 1 tbsp
GARLIC PASTE - 1 tbsp
GREEN CHILLY PASTE - 1 tbsp
WATER - 3 CUP
SALT
DRIED LEMON - 3
CORIANDER LEAVES
OLIVE OIL
CHICKEN MAGGY CUBE - 2 CUBE
FOR CHICKEN MARINATION
RED CHILLY POWDER - 3 tbsp
MAJBOOS MASALA POWDER - 2 tbsp
BLACK PEPPER POWDER - 1 tbsp
TURMERIC POWDER - 1/2 tsp
SALT
LEMON JUICE - 1 tbsp
VINEGAR - 1 tsp
GINGER PASTE - 1/2 tsp
GARLIC PASTE - 1/2 tsp
GREEN CHILLY PASTE - 1/2 tsp
PREPARATION
Wash and soak the Basmati rice for 1 hour .
Cut the whole chicken into 8 pieces. Wash well and drain. Take a bowl, add Red chilly powder,Majboos masala powder,pepper powder, turmeric powder,ginger garlic chilly paste, lemon juice, vinegar and enough salt. Mix these ingredients together and make a thick creamy paste. Then add chicken pieces. Marinate the chicken pieces well and keep it in a refrigerator for 1 hour.
Take a large nonstick biryani vessel, heat enough olive oil in it. Add marinated chicken pieces one by one and fry until it turns to a crispy and fried. You can turn it other side when one side of chicken pieces are cooked and fried. Then take out the fried chicken pieces from the oil and keep aside.
You can serve this with yogurt, pickles and Tomato chutney.
