MUTTAYAPPAM /  MUTTA SURKA 

Muttappam or Muttasurka is a famous breakfast for Malabarians especially people who living in kannur district of Kerala. Muttayappam is an another version of Malabar Neyyappam. Mostly people in kannur cooks Muttayappam as their traditional or common food even if their parties also they include this dish.

Muttayappam looks round, white, fluffy. It's just exactly looks like egg because of its whitish colour and fluffy appearance. But here for Muttayappam recipe there is no need to add egg in the recipe. 
Muttayappam is very tasty and Delicious. Sides are crispy and inner parts is fluffy , soft and spongy. It's because it is deep fryed mainly in coconut oil.You can also use sunflower oil. But to get real kannur (malabar) taste, coconut oil is essential.  The one of the best combination of kannur people (Malabarian) is Muttayappam with beef curry, Muttayappam with chicken curry.
Here I shared detailed recipe to cook Muttayappam/ Muttasurka. So let's follow my simple recepi and try your best 

INGREDIENTS 
☆ White rice - 1 cup + 1/3 cup
☆ Cooked rice - 1 cup
☆ Water - 1 cup + 1/2 cup
☆ Salt - to taste 
☆ Coconut oil - for frying 

PREPARATIONS 

☆ Soak White rice atleast 4 hours.
☆ Take a mixer grinder, add washed and drained White rice.
☆ Add 1 cup cooked rice
☆ Add 1 and 1/2 cup water
☆ Grind well to a fine batter.
☆ Take a bowl, transfer the batter, add enough salt and mix well.
☆ Take a kadai, add enough coconut oil 
☆ Once the oil heated, add 1 scoop of batter into the oil.
☆ Once the batter become fluffy and little crisp it's sides, then flip it and cook until 3 minutes, then take out from the oil. 
☆ Follow the same steps and try your best.

INSTRUCTIONS 

▪︎ White rice should be soaked atleast 4 hours.
▪︎ While grinding water level & ingredients in the mixer grinder should be same level. 
▪︎ Batter should be thicker than dosa batter.
▪︎ While frying/ cooking, only apply scoop of batter after reducing heat, after 1 minutes you can increase the flame. 
▪︎ This appam should be deep fried.
