Chicken lollipop is a delicious starter recipe of an Indo-chinese cuisine. It's usually made with chicken drumsticks ( legs). The chicken legs meat is cut loose from the bone end and pushed down creating a lollipop appearance. Chicken lollipops are made with a spiced batter coated mix that are deep fried until it gets crisp. It's usually serve with special sauce. The fried lollipops are mixed with these special sauces and served hotly as an appetizer.
Chicken lollipop can also made with chicken wings.There are many ways to make chicken lollipop. You can either deep fried the lollipop or else deep fry and then toss them in special spicy sauce. In fact this lollipop is everyone's favourites especially all age groups.
I tried this recipe last week. My daughter loves this very much. She is one the great fan of chicken drumsticks (legs). She likes chicken lollipop as a starter whenever we went any Indo-chinese restaurant. So I want to try myself for my darling. When I tried first time, it was successful that it gives extra taste and extra perfect like restaurant lollipops. We enjoyed our starter very much.
Let's follow my simple recipe of chicken lollipop. Make your kids and family happy and enjoying with these special chicken lollipops.

INGREDIENTS:
Chicken drumsticks (legs) - 7 or 8 legs
All purpose flour - 5 tbsp
Corn flour - 2 1/2 tbsp
Kashmiri chilly powder - 2 tbsp
Biryani masala powder - 1/2 tsp
Black pepper powder - 1 tsp
Soya sauce - 1 tbsp
Ginger garlic green chilly paste - 1 tbsp
Salt - to taste
Egg - 1
Water - for thick batter
Sunflower oil - for deep frying
Aluminium foil - for decorating lollipops
PREPARATIONS:
∆ Take 7 or 8 chicken drumsticks (legs). Clean and wash thoroughly by using salt and lemon juice. Drain the excess amount of water from chicken legs
∆ Take a sharp knife, Using this knife make a cut on all the way around the legs just below the knuckle, cutting through the skins and tendons. Push the meat and shape them to balls on one side. Place them on a plate.
∆ Take a bowl, add all ingredients such as all purpose flour, cornflour, Kashmiri chilly powder, black pepper powder, biryani masala powder, soya sauce, egg, salt. Mix them very well. Then make a thick batter by using enough water. The batter consistency is like that of idli batter. Refrigerate this for 20 minutes.
∆ Take a Kadai, enough heat sunflower, then add the marinated chicken legs one by one. Deep fry them until it gets crisp.
FOR SPECIAL SAUCE:
Chicken fried oil - 2 tbsp
Chopped garlic - 1 tbsp
Chopped Onion - half ( medium)
Green chillies (chopped) - 2
Soya sauce - 1 tbsp
Red chilli sauce - 1 tsp
Salt - to taste
Tomato ketchup - 1/4 cup
Chilli flakes - 1 tsp
Spring onion - for garnish
Red food colour - pinch(optional)
Dried Kasuri Methi - 1/2 tsp
∆ Take a saucepan, add chicken lollipop fried oil, add finely chopped garlic. Saute well for 3 minutes.
∆ Add finely chopped onion and green chillies. Saute well until the onion gets light golden colour.
∆ Then add soya sauce, red chilli sauce, tomato ketchup, chilli flakes and enough salt. You can make this in a medium flame. Mix it well.
∆ You can add red food colour if you wish. It's optional.
∆ Keep it for cool. Then grind well without using water.
∆ Transfer them into the pan...once it began to boil, Sprinkle some dried kasuri Methi leaves. Mix well.
∆ Garnish with finely chopped spring onions.
The spicy and tangy sauce is ready. Don't switch off the flame. Once the sauce is ready, you can transfer the fried chicken lollipop into this sauce. Mix them well.
You can serve hotly as an appetizer/starter. I am sure that your kids will love this. You can also serve this with hot parotta.
INSTRUCTIONS.
* You can make chicken lollipop with chicken wings also.
* Try to keep marinated chicken legs for maximum 20 minutes.
* If you don't like to toss with special tangy sauce, then you can avoid it. You can just bite hotly without sauce once the lollipop are fried. But the real taste is tossing with special sauce.
∆ While you are frying chicken lollipop, you can make the special sauce on other burner at same time. It gives extra perfect and you can serve it hotly.
∆ You can skip the grinding step. It's not important. But if you grind it will become a creamy sauce texture. Then it become easy to mix with fried lollipops.
