Muhallebi is a traditional sweet, cool and refreshing dessert that's very popular among Middle eastern countries especially Arabs. It's like a milk pudding that we made  by using China grass. But here, the muhallebi is just like same in structure and outlook like that of milk pudding. But the ingredients are different.


MUHALLEBI ... AN ARABIC DESSERT


Muhallebi is another version of milk pudding. It's commonly made with milk, conflour. Traditionally we use cardomom powder for excellent flavours and garnish it with sprinkling of cinnamon powder or cashew nut powder. Now a days other ingredients are used instead of cardomom and cinnamon powder. However you can use vanilla essence, rose water or saffron. You can also use any other essence such as almond essence, pistachio essence or strawberry essence. You can also skip it altogether to  make just a sweet milk pudding.

Muhallebi is a delicious Arabic dessert that comes together by using just only 4 ingredients and it's very easy to prepare with in 10 minutes. Muhallebi is one of the ancient popular Arabic dessert. But it's popularity is still remain in Arabic as well as middle Eastern countries. 

Serving is very important. The most beautiful way to serve muhallebi is in a small individual cups with a beautiful decoration by using pistachio slices and bring it out on a beautiful tray after the meal. But in some Arabs country, they served it with tea or coffee.

I tried this recipe last week. When my husband asked me to prepare any sweets then I turned for making muhallebi. It is very easy and simple. Only four ingredients needed to make this. Also the ingredients are already still available in everybody's houses. If you make this dessert, I am sure that you and your family likes it very much.

Let's follow my simple recipe and make your days happy and enjoying with this dessert.


INGREDIENTS:

Milk  -  4 cups

Conflour powder - 6 tbsp

Sugar - 3/4 cups

Whipping cream - 1 cup ( optional)

Vannilla essence - 1 tsp

Pistachio slices - for garnishing

PREPARATIONS:


* Take a saucepan, add 4 cups of milk, sugar, vanilla essence, conflour powder, whipping cream and whisk well until all the ingredients are  mixed and dessolved.


*Switch on the burner, place the sauce pan on medium flame.


* Whisk Continuously for about 10 minutes until it starts to thick.


* Reduce the flame and continue whisking for few more minutes until it thicken to a pudding consistency.


* Remove from heat, place it in a small dessert cups / ice cream cups. 


* Garnish it with pistachio slices.


* Then keep it in a refrigerator to set and cool.

* You can wait for at least 1/2 hour. It's very tasty when it's too cold.



INSTRUCTIONS:


Instead of conflour powder, you can use rice flour.

∆ You can use ready made muhallebi kit for making this delicious desserts.Its available in every super markets. If you use the ready made packets, you can add only milk and sugar. Other all ingredients are included in that kit. You can follow the instructions written at the back side of the packet.

* You can use any other essence according to your choice.

* While making this, if the ingredients gets thickened you should reduce the flame to low and continue whisking. So the milk doesn't catch the bottom of the pot and burn.

* If you use conflour powder, it will yield a smooth consistency while the rice flour have a bit of thickness and different taste. So try to use conflour maximum.

* You can garnish with your own style. But Garnish with pistachio slices are more beautiful than other.
