PICKLING IS A PROCESS WHERE THE FOOD IS PRESERVED IN SALT AND VINEGAR .THERE ARE MANY VARIETIES OF PICKLES, AMONG THEM THE LEMON PICKLES ARE MOST POPULAR PICKLES WHICH DEPENDS ON ITS TASTE AND FLAVOUR.
PICKLES ARE MOSTLY FLAVOURED IN SPICY , SOUR ,SWEET AND BITTER. HERE , THIS VARIETY LEMON PICKLES MAKES A SPECIAL FLAVOUR OF SWEET AND SOUR.
Lemon pickle is a traditional Indian contiment made with lemons, spices, salt and oil. Many people make pickles at home that can store a long and it usually last for a year. pickles are served as a side in an Indian meal. A typical Indian meal always consists of a pickle. Among them Lemon Pickle is the most popular pickle by comparing with other pickle.
Here I used easy and simple method for making lemon pickle. Lemon is cut into small pieces and stored in a container by adding enough salt. These are kept for a week. After a week this lemon is little bit melt in the salt. So it is easy to seasoned with other spices.Here I added chopped dates to get thick texture and sweet tastes to this lemon pickle. It is then transferred to an Airtight bottle/jar. After a week you can use and serve as side dish to any other meals. This method of lemon pickle is very tasty because I added some chopped dates. So the tastes is sweet and sour. It is very tasty when little bit pickle inside with any meals.
Let's follow and try my recipe to make sweet and sour Lemon Pickle.
INGREDIENTS
LEMON - 1 Kg
VINEGAR - 1 BOTTLE ( 946 ml)
DATES - 12
GINGER - 1 BIG (INCH LONG )
GARLIC - 1 WHOLE
GREEN CHILLY - 8
SALT
PICKLE POWDER - 4 tbsp
RED CHILLY POWDER - 2tbsp
TURMERIC POWDER - 1/2 tbsp
FOR SEASONING
MUSTARD SEEDS - 1 tsp
FENUGREEK SEEDS - 1 tsp
CURRY LEAVES - ONE HANDFUL
COCONUT OIL - 4 tbsp

PREPARATION
Step 1
Take 1 kg Lemon , wash them and dry it with a cloth.
Step 2
Cut the Lemon into 8 pieces equally and remove the seeds.
Step 3
Transfer these Lemon pieces in to an Airtight bottle by adding enough salt ( atleast 2 tbsp of salt )and shake well. Shake the lemon bottle every day for 1 week.
*DO NOT TOUCH WITH YOUR HANDS *
Step 4
Heat a kadai , Add coconut oil , Splutter Mustard seeds , then Fenugreek seeds , Curry leaves , finely chopped ginger , finely chopped garlic, chopped green chilly . Mix well and saute for 3 or 4 minutes. (Don't burn this ginger garlic )
Step 5
Once the ginger garlic mixes well , add 1 bottle Vinegar , then add Turmeric powder, Red chilly powder and Pickle powder . Mix well to 2 to 3 minutes until the vinegar mix began to boil.
Step 6
Transfer all the salty lemon mix that we preserved in jar to the boiling vinegar mix. Stir well , let them to boil for 2 or 3 minutes.
Step 7
Switch off the flame , keep it aside for cool. Then add finely chopped dates and mix well with spoon. ( Remember - don't touch with your hands or fingers )
Step 8
Transfer these into a pet bottles .you can make 4 or 5 pet bottles .keep this pickle for 1 week. After that you can start using. This lemon pickle is long lasting . No need to keep in refrigerator. You can keep it in a room temperature.
The tasty sweet and sour Lemon Pickle is ready to serve.
