Lemon rice is very popular rice dish of South India. It is tasty and tangy. This recipe is made with basmati rice. It is light yellow in colour. It is tempered with mustard seeds, curry leaves and has carrot for crunch and lemon juice for tangy flavor. It is pretty to make this as a great quick lunch or meal.
In this recipe I share how to cook Lemon rice quickly. Here I used pressure cooker to save the time. First I seasoned Mustard seeds, curry leaves and dried red chillies. Then I add three garlic cloves ( finely chopped). Adding garlic is optional. We all like garlic tastes,so I used here for more special flavor. After I add chopped carrots and roast well. Then I add enough water, salt and a pinch of Turmeric powder. Once the water began to boil, I add lemon juice and then transferred the basmati rice ( I didn't cook the rice earlier).I closed the pressure cooker and cook until first whistles came. This is my simple and easy lemon rice recipe.It is sure that you can make this rice very quickly. You can also be made as a Tiffin box for your child or as a picnic lunch. It's a simple Delicious dish that you can have it as a light dinner also. Traditionally lemon rice is served with Papads( pappadam), vegetable salad or coconut chutney. But here I used a side dish. The spicy prawns roast is served with tangy and crunchy lemon rice. This is a good combination that every one loves.

INGREDIENTS
Basmati rice - 2 cup
Water - 3 cup
Garlic cloves ( opt) - 3- 4 ( finely chopped)
Carrot - 1 big
Mustard seeds - 1/4 tsp
Curry leaves
Dried Red chilly - 3
Turmeric powder - 1/4 tsp
Cumin seeds - pinch
Lemon juice - 1 lemon
Butter/ oil - 4 tbsp
Salt

PREPARATION
∆ Wash and soak the basmati rice in water for 10 minutes. Keep aside.
∆ Take a pressure cooker, heat 4 tbsp of butter.
∆ Splutter 1/4 tsp of mustard seeds, then add curry leaves and dried red chillies. Saute well for 2 minutes.
∆ Add finely chopped garlic cloves and saute just for 1 minutes.( Garlic is optional, you can either add or remove it). Don't burn the garlic. You can just saute for 1 minutes.
∆ Add finely chopped carrots and roast well until the roast smell comes.
∆ Add 3 cup of water, 1/4 tsp of Turmeric powder, enough salt and a pinch of cumic seeds.
∆ Once the water began to boil, add lemon juice and mix well again.
∆ Transfer the soaked and drained basmati rice into this boiling water. Stir well with spatula. Close the pressure cooker. Wait for first whistle. Switch off the flame and keep aside. After 5 minutes you can open the pressure cooker and mix the rice well with spatula. (Don't break the rice while mixing,You can only just mix it).
THE TASTY, TANGY AND CRUNCHY LEMON RICE IS READY TO SERVE. YOU CAN SERVE IT ETHER AS A LUNCH OR DINNER. IT CAN BE SERVED WITH SALADS, PAPADS, PICKLES OR EVEN WITJ ANY SIDE DISHES.
