WHAT IS SAMBAR ?
IT IS PREPARED BY USING CHANA DAL OR MASOOR DAL. ITS YOUR CHOICE TO PREFER WHICH DAL SHOULD BE USE. HERE I USED MASOOR DAL. THE TRADITIONAL SAMBAR IS COOKED THE DAL AND VEGETABLES SEPERATELY. TRADITIONAL RECEPI TELLS TO COOK THE DAL FIRST. ONCE IT BOILED AND COOKED, THEN ADD ALL THE VEGETABLES. THE SPICES WILL BE ADDED ONLY WHEN SEASONING.

HERE I MAKE EASY AND SIMPLE RECIPE. IT IS VERY USEFUL TO THE BEGINNERS. I MAKE THE SAMBAR IN PRESSURE COOKER. I DIDN'T COOK DAL AND VEGETABLES SEPERATELY. I PUT DAL AND VEGETABLES TOGETHER IN PRESSURE COOKER BY ADDING A PINCH OF TURMERIC POWDER, SAMBAR POWDER, ENOUGH SALT AND WATER. ONLY ONE WHISTLE NEEDED. AFTER THAT I SEASONED THE SAMBAR WITH MUSTARD SEEDS,FENUGREEK SEEDS, CUMIN SEEDS, DRIED RED CHILLY, CURRY LEAVES, SHALLOTS AND ENOUGH SPICES SUCH AS SAMBAR POWDER, RED CHILLY POWDER etc BY USING COCONUT OIL.

THIS RECIPE IS SO SIMPLE AND CAN MAKE IT QUICKLY. LETS FOLLOW THE RECIPE OF INSTANT SAMBAR IN PRESSURE COOKER. IT TASTES JUST LIKE THAT OF RESTAURANT STYLE SAMBAR.
INGREDIENTS
MASOOR DAL - 1/2 CUP
CARROT 🥕 - 2 LARGE
POTATO 🥔 -2 LARGE
TOMATO 🍅 - 1 MEDIUM
ONION - 1 MEDIUM
DRUMSTICK - 2
PUMPKIN - 1/4 FROM WHOLE ONE
LADY FINGER - 5
BRINJAL - 2 SMALL
BEANS - 6
IVY GOURD - 4
YAM - 1/4 FROM WHOLE
RAW BANANA - 1
GREEN CHILLY - 3
GARLIC - 2 CLOVES
TAMARIND -1 LEMON SIZE
INSTANT SAMBAR POWDER -1 tbsp
TURMERIC POWDER - 1 tsp
SALT - FOR TASTE
WATER
FOR SEASONING
MUSTARD SEED - 1tsp
FENUGREEK SEED -1tsp
CUMIN SEED - 1tsp
SHALLOTS - 7
CURRY LEAVES
DRIED RED CHILLY - 3
RED CHILLY POWDER -1tbsp
INSTANT SAMBAR POWDER - 2tbsp
COCONUT 🥥 OIL - 4tb
PREPARATION
Soak Tamarind in a 4tbsp of water for 10 minutes.
Cut the vegetables in a large piece - 1 inch length.
Wash the vegetables and Masoordal .
Put these vegetables and Dal in a pressure cooker. Also add 1onion and 1 tomato .
Add water that is just 1 inch above the vegetables in the pressure cooker.
Add 1/2tsp of Turmeric powder ,1tbsp of Instant sambar powder and salt to taste.
Add the soaked tamarind with water.
Close the pressure cooker .
Wait for 1st whistle.
Off the flame
Open the pressure cooker only after its pressure gone.
For seasoning firstly cut the each shallots into two pieces and keep aside.
In a clay pot add 4tbsp of coconut oil.
Add 1tsp of mustard seed after the oil heat.
When mustard seed splutter ,add 1tsp cumin seed and 1tsp of fenugreek seed .
After that add the shallots ,dried red chilly and curry leaves.
Stir it for 2minute in a medium flame.
At last add 1tbsp of red chilly powder and 2tbsp of Instant sambar powder in a very low flame. Mix well and stir it for 2 or 3minute.
Take the pressure cooker and add the all cooked vegetables and cooked water into these seasoned clay pot Mix and stir well.
Keep in a high flame .
Then it began to boiling .
Switch off the flame after 5min...
Don't close the lid while boiling after seasoning.
The tasty and spicy Sambar ready
It can be served with Dosa ,Idili chapati and any boiled rice .
